Get an inside look at the state-inspected poultry slaughter and red meat butchering facility at Stone Barns Center, from the kill floor to the evisceration room to the cut and pack room. We'll give a detailed look at our systems and infrastructure, which we used to process and package Freedom Ranger and Delaware chickens, Broad Breasted Bronze turkeys, and Pekin and Rouen ducks in 2017. We’ll demonstrate in-house butchering techniques, such as 8-piece chicken and spatchcocking, offer hands-on practice, and give a detailed look at our packaging and butchering equipment.
